Featured wine: Duchman Family Winery 2008 Rosé

Did you know that you can make a white wine using red grapes?
The “red” color of red wine comes from the skins of the wine. During the wine winemaking process, the winemaker allows the juice of the wine to “macerate,” in other words, steep with the skins. It is during this part of the process that the wine develops its color. If you press the juice of red grapes but then do not allow it into contact with the skins, you will obtain a white wine.
Did you know that traditional rosé wine is NOT made by blending red and white wines?
In fact, traditional rosé wine is made by limiting the amount of time that the juice of red grapes “macerates” with “skin contact.”
To make the Duchman Family Winery Rosé (one of our most popular wines), the winemaker employs a technique called saignée in French. During the maceration period, she or he “racks” off (in other words, draws off) some of the wine from the vinification vessel (in this case, stainless steel vats).
The wine that is produced during the saignée process is rosé in color.
At the Duchman Family Winery, we use a blend of noble red grapes to make our popular rosé. The resulting wine is fresh, with crisp fruit aromas and flavors, but it also retains some of the “tannin” that gives the wine body, flavor, and structure.
Look for hints of strawberry, rose, and cinnamon is this delicious rosé. Serve slightly chilled with fish and white meat dishes or just pour poolside for a perfect summer sipping wine.
Recommended pairing: Curried chicken served with Basmati rice in a raisin, cashew, and cinnamon sauce. The bright flavors of the wine will pair well with the intense spice of the curry while the gentle tannin will bring out the rich flavor of the chicken.
